Ingredients

For the burger buns:
- 4 eggs
- 40g sugar
- 100ml milk
- 7g dried yeast
- 350g strong flour
- 5g salt
- 80g softened butter
- 1 egg yolk for egg wash
- 3 tbsp sesame seeds
For the burgers:
- 400g beef mince 10% fat -ideally ground chuck or short rib beef
- 4 slices American-style cheese
- Salt and black pepper
For the burger sauce:
- 1 tbsp mayonnaise
- 1 tbsp tomato ketchup
- 1 tbsp Dijon mustard
- Chopped Dill
For the homemade pickles:
- 1 cucumber
- 1 medium brown onion
- 100ml white wine vinegar
- 100g caster sugar
- Handful Dill
- 50ml water
Method
- Start with the burger buns. Preheat the oven to 175c. Line a muffin tray with butter and plain flour. Place the flour, salt, sugar and dried yeast together in a mixer with the dough hook attached. Mix for 1 minute, then add the milk. Next add the eggs and mix on a medium speed for 5 minutes. Now add the butter and mix for 10 minutes until the dough cleans the bowl.
- Place the dough in a greased bowl, cover and allow to double in size. Then turn the dough out onto a work surface and cut into 6 evenly sized balls. Roll the balls under the pressure of the palm of your hand. Lift your hand slightly at the end to create a round smooth tight ball. Place the balls in the lined muffin tin. Cover and allow to double in size.
- Brush the buns with egg wash, sprinkle with sesame seeds and bake for 18 minutes until golden brown.
- For the pickles, slice the cucumber and onion approximately 1cm thick and place in a jar or bowl. Add the salt and dill to the jar/bowl before heating the vinegar, sugar and water in a pot. Pour the warm liquid into the jar/bowl, covering the cucumber and onion, and allow to return to room temperature.
- For the burger patties, season the mince heavily with salt and pepper. Place a non-stick pan on the heat and divide the mince into 4 balls. Place 2 balls in the pan (easier to cook 2 at a time), squeeze using a spatula to flatten and caramelise on both sides. Once the burgers are flipped, add a slice of cheese to both along with a splash of water in the pan. Place a lid on top and cook for 2 minutes to ensure the cheese is melted and meat cooked through.
- To assemble the burgers, slice the buns in half and toast. Mix the mayonnaise, ketchup, mustard and dill and spread on the burger bun. Top with pickled cucumber and onion slices, and finish with the burger and cheese patty.
