Ingredients

Serves 2

For the chicken:

  • 2 chicken fillets
  • 1 tbsp Cajun spice
  • 1 tsp smoked paprika
  • 1 tbsp olive oil
  • 1 tsp ground coriander
  • Sea salt & black pepper

For the salad:

  • 1 small head romaine or baby gem lettuce, chopped
  • ½ red onion, finely sliced
  • Parmesan shavings
  • Handful croutons

For the dressing:

  • 3 tbsp Greek yoghurt
  • 1 tsp Dijon mustard
  • 1 small garlic clove, minced
  • Juice of 1 x lemon
  • 2 anchovy fillets
  • 1 tbsp grated Parmesan
  • Splash of water to loosen
  • Chopped parsley
  • Salt & pepper to taste

Method

  1. Marinate the chicken: Coat chicken in Cajun, paprika, olive oil, coriander, salt, and pepper.
  2. Grill in Ninja: Use the Ninja Grill or Air Fryer on the "Grill" setting. Cook chicken for 10–12 minutes, until golden and cooked through. Rest and slice.
  3. Make the dressing: Mix all dressing ingredients in a bowl and loosen with a splash of water until pourable.
  4. Assemble the salad: Toss chopped lettuce with red onion and some dressing. Top with sliced grilled chicken, Parmesan, and croutons. Drizzle more dressing over the top.
