Ingredients

  • 20g butter
  • 2kg fresh mussels
  • 150ml white wine
  • 2 shallots chopped finely

For the garlic butter:

  • 50g pure Irish butter
  • 1tbsp fresh parsley chopped finely
  • 1clove garlic minced

Method

  1. Melt the butter in a pan, add shallots and cook for 1 minute.
  2. Add the mussels and white wine,
  3. Please the lid on and shake occasionally, cook for 2-3 minutes until the mussels open.
  4. Serve.
