Ingredients
- 20g butter
- 2kg fresh mussels
- 150ml white wine
- 2 shallots chopped finely
For the garlic butter:
- 50g pure Irish butter
- 1tbsp fresh parsley chopped finely
- 1clove garlic minced
Method
- Melt the butter in a pan, add shallots and cook for 1 minute.
- Add the mussels and white wine,
- Please the lid on and shake occasionally, cook for 2-3 minutes until the mussels open.
- Serve.
