Ingredients

- 1kg beef roast (ribeye, sirloin, or topside)
- 2 tbsp Spice Mix Seasoning (shop bought or make your own with a blend of Chinese Five Spice, Sea Salt, Nori Seaweed, Chilli, Garlic Powder, Onion Powder)
- 2 tbsp olive oil
- 1 rice vinegar
Method
Prepare the Beef
- Remove from the fridge 30 minutes before cooking to bring it to room temperature.
- Pat the beef dry with paper towels.
- In a bowl, mix olive oil, lemon juice, and all spices.
- Rub the spice mix all over the beef, ensuring full coverage.
- Preheat the Air Fryer
- Set the air fryer to ROAST function at 180°C and let it preheat for 3 minutes.
Roast the Beef
- Place the beef in the air fryer basket or tray.
- Roast at 180°C for 35-45 minutes, flipping halfway through.
Ensure the beef is cooked to your preference using a meat thermometer:
- Rare: 50°C → 30-35 min
- Medium-rare: 57°C → 35-40 min
- Medium: 63°C → 40-45 min
- Well-done: 71°C → 45 min or more
Rest & Serve
- Remove the beef from the air fryer and cover with foil.
- Let it rest for 10 minutes before slicing to retain juices.
- Slice against the grain and serve with your favourite roast potatoes and veggies.
