Let the cookies rest in the air fryer for 2-3 minutes, then transfer to a wire rack to cool.

Ingredients

Makes: 12 cookies
Prep Time: 10 minutes
Cook Time: 8-10 minutes per batch

  • 125g plain flour
  • 1 tbsp matcha powder
  • ½ tsp baking powder
  • A pinch of salt
  • 100g unsalted butter, softened
  • 100g brown sugar
  • 50g caster sugar
  • 1 egg
  • 100g chocolate chips (or leftover Easter eggs chopped)

Method

Prepare the dough:

  1. In a bowl, whisk together flour, matcha powder, baking powder, and salt.
  2. In a separate bowl, cream the butter, brown sugar, and caster sugar until light and fluffy.
  3. Beat in the egg.
  4. Gradually mix in the dry ingredients until just combined.
  5. Fold in the chocolate chips.

Shape the cookies:

  1. Scoop about 30g of dough per cookie and roll into balls.
  2. Flatten slightly and place on parchment paper or an air fryer-safe silicone liner.

Air fry the cookies:

  1. Preheat your air fryer to 160°C for 3 minutes.
  2. Place the cookie dough balls in the basket, leaving space for spreading.
  3. Air fry for 8-10 minutes until edges are set but the centre is slightly soft.

Cool & enjoy: Let the cookies rest in the air fryer for 2-3 minutes, then transfer to a wire rack to cool. Enjoy warm or store in an airtight container for up to 5 days!
