- 125g plain flour
- 1 tbsp matcha powder
- ½ tsp baking powder
- A pinch of salt
- 100g unsalted butter, softened
- 100g brown sugar
- 50g caster sugar
- 1 egg
- 100g chocolate chips (or leftover Easter eggs chopped)
Method
Prepare the dough:
- In a bowl, whisk together flour, matcha powder, baking powder, and salt.
- In a separate bowl, cream the butter, brown sugar, and caster sugar until light and fluffy.
- Beat in the egg.
- Gradually mix in the dry ingredients until just combined.
- Fold in the chocolate chips.
Shape the cookies:
- Scoop about 30g of dough per cookie and roll into balls.
- Flatten slightly and place on parchment paper or an air fryer-safe silicone liner.
Air fry the cookies:
- Preheat your air fryer to 160°C for 3 minutes.
- Place the cookie dough balls in the basket, leaving space for spreading.
- Air fry for 8-10 minutes until edges are set but the centre is slightly soft.
