Ingredients
- 100g fresh cod
- 50g plain flour
- 2 eggs
- 50g panko breadcrumb
- Butterhead lettuce
- 1/2 cucumber
- Red onion
- Brioche burger bun
Tartare sauce
- 500g mayo
- 25g gherkins
- 25g capers
- 25g shallots diced fine
- Parsley
- 25g rice wine vinegar
- Pickle for cucumber
- 100g honey
- 100g white wine vinegar
Method
- Place fresh cod into flour, then into beaten egg mix, and then into breadcrumb- set aside
- For tartare sauce dice fine shallots, capers, gherkins and parsley. Mix all together with Mayonnaise and add vinegar.
- For the pickle cucumber- put honey in a saucepan and slightly caramelise it. Add vinegar, take off the heat. Let the mix cool slightly. Add sliced cucumber inside.
- Cook fish in a pan with oil, at 180 degrees until golden (about 4 mins). Take out and sprinkle with salt.
- To assemble burger -toast the bun, slightly. Place tartare sauce on the top and bottom. Place lettuce on the bottom, followed by fish, thinly sliced red onion, pickle cucumber.
- Serve with chips or on its own.
