Ingredients

  • 500g "00" flour
  • 365g water (32°-39°)
  • 5g instant yeast
  • 15g salt
  • 1tbs olive oil

Pizza sauce

  • 1 onion
  • 2 garlic cloves
  • 1 tbsp tomato paste
  • 300g cherry tomatoes
  • 500g chopped tomatoes

Tomato sauce

  • Ndjua sausage (spicy Italian sausage)
  • Pepperoni
  • Mozzerella
  • Fresh Basil leaves - for after it's cooked

Method

Best done the night before:

  1. Mix all ingredients
  2. Place in a bowl and cover.
  3. Divide the mixture into 220g
  4. Roll onto a tray with olive oil
  5. Par bake in a buttered tray for 5 mins at 300° and I'll turn it over and let it cool.
  6. Flip it back put toppings and cook 8mins at 300degrees.

Pizza sauce

  1. Place onion and garlic into a saucepan with olive oil.
  2. Add tomato paste, cook out for a few mins
  3. Add chopped fresh tomatoes and toppings
