Ingredients
Serves: 4
- 600 gm mince lamb
- 6-8 button mushroom finely chopped
- 1 medium onion finely chopped
- ½ red pepper finely chopped
- 4-5 cloves of garlic crushed or grated
- 1 cm ginger crushed or grated
- 1tbsp curry powder
- 1 tsp salt or to your taste
- 1-2 fresh chillies finely chopped (opt)
- 1 tbsp butter
- 1 tbsp corn starch
For tomato sauce
- 2 tbsp oil
- 1 small onion,
- ½ cup of grated carrot
- 400gm tin tomato
- 5-6 fresh tomato finely chopped
- 4-5 garlic cloves crushed
- 1 tbsp curry powder
- Salt to taste
- 1 tbsp light soya sauce
- Hand full of fresh coriander chopped
Method
- Preheat the oven to 180 degrees
- Mix all the above meatball ingredients in one bowl.
- Make into golf size ball and place in an oven tray
- Cook meatball for about 25 min
- When its cooking, start with the sauce
- Heat oil in a pot
- Add onion, salt and cook until soft
- Add both tin and fresh tomatoes, carrot and garlic
- Cover and cook for 5-6 min until tomatoes become thick sauce
- Once tomato is cooked and becomes a thick sauce add curry powder and soya sauce.
- At this stage you can blend to make a smooth sauce
- Once sauce is cooked add cooked meatball and cook them together.
- Add fresh coriander and serve hot with spaghetti.
