Here's how you can make a high-protein, simple-to-make overnight Weetabix that tastes just like cheesecake!
Ingredients
- 2 Weetabix (or similar)
- 100ml skimmed milk
- 200g Greek yogurt
- 100g frozen berries
- Cinnamon powder
- Fresh berries
- Mint leaves
- 60g white chocolate (melted)
Homemade Granola
- 100g sunflower seeds
- 80g walnuts
- 100g pumpkin seeds
- 165g flaked almonds
- 70g oats
- 200g desiccated coconut
- 150g cranberries
- 50g honey
- 1 tsp sea salt
Method
- Crush your frozen berries in the bottom of your container.
- Pour over your skimmed milk to soak the Weetabix.
- Mix the Greek yogurt and frozen berries together, then layer it on top of your soaked Weetabix.
- Drizzle the melted white chocolate over the top.
- Garnish with fresh berries and mint leaves to finish.
Homemade Granola
- Combine all ingredients except for the cranberries, honey, and sea salt in a large bowl.
- Preheat your oven to 180°C.
- Spread the mixture evenly on a tray, making sure it's flat.
- Drizzle the honey and sprinkle the sea salt over the top.
- Bake for 20 minutes, stir, then bake for another 5 minutes.
- Once out of the oven, stir in the cranberries and let it cool.
- Store in an airtight container.
