- 150 g butter at room temperature
- 80 g soft brown sugar
- 80 g caster sugar
- 1 egg
- 2 tsp vanilla extract
- 225 g self-raising flour
- ½ tsp bread soda
- ¼ tsp salt
- 70 g milk chocolate chips
Method
Cream together the butter, brown sugar and caster sugar until combined and pale in colour.
Add the egg and vanilla extract and combine.
Sieve in flour, bread soda, salt and combine into mixture. Add in the chocolate chips.
Roll into balls the size of a ping pong and place on baking tray spaced apart, press down slightly with a fork to flatten.
Bake in preheated oven at 200C/180C fan/gas 6 on a high shelf for 7-9 minutes. (Watch them, every oven varies!)
Pop some chocolate chips into the cookies when out of the oven for that authentic cookie look!
Cool on a raised wire rack.
Roll leftover dough into small balls, freeze flat in a baking tray and transfer to a freezer bag once frozen. Enjoy fresh cookies from frozen anytime you want.
