Crumble Mix
- 100g plain flour
- 100g porridge oats
- 15g mixed seeds
- ¼ tsp bicarbonate of soda
- Pinch ground cinnamon
- 10g butter, melted
- 35ml vegetable oil
- 30ml apple juice
- 25ml maple syrup
Filling
- 150g Natural Yoghurt
- 200g frozen mixed berries
- 55ml maple syrup
- 30g cornflour
Garnish (optional)
- Melted dark chocolate
- 1 tbsp mixed seeds
Method
- Preheat the oven to 180C/160C fan.
- Line a 8" square baking tin with parchment paper.
- For the crumble mix, place the flour, oats, soda and cinnamon into a bowl and mix.
- To this add the butter, oil, maple and apple juice. Mix to form a crumble mix.
- Add ½ of this mix to the base and press down with a spoon to compact.
- Place in the fridge while you make the filling.
- For the filling, add the yoghurt, frozen berries, cornflour and maple syrup to a bowl and mix well.
- Spoon this onto the chilled base and spread to cover.
- Sprinkle the remaining crumble mix on top and bake in the preheated oven for 40 minutes or until golden brown all over.
- Remove, chill & portion.
- An added optional extra, you can melt dark chocolate and drizzle it over the bars and sprinkle on some mixed seeds.
