  • 200g of Brussels sprouts
  • 75g of smoky bacon (optional for a veggie-friendly version)
  • 1 red onion, diced
  • 5ml of lemon juice
  • 50g of crushed walnuts
  • 15ml of soy sauce
  • Salt and pepper to taste
  • 2 x cloves garlic
  • 1 x tsp sesame oil
  • 1 x red apple, diced
  • 2 x cloves garlic

Method

Prepare the Brussels sprouts: Blanch the Brussels sprouts the night before to save time on Christmas day!

Bring salted water to a boil and cook the sprouts until the water returns to a rapid boil, then drain and cool them under cold water. This helps to retain their vibrant green color and brings out their natural sweetness.

Roast the sprouts: Preheat your oven to 200°C. On a roasting tray, toss your blanched Brussels sprouts, smoky bacon (optional for a veggie version, omit the bacon), red onion, apple, garlic and crushed walnuts with soy sauce. Roast for 12 minutes, letting the flavors meld together. This can also be panfried if you are stuck for oven space.

Finishing touch: Once out of the oven, drizzle the Brussels sprouts with fresh lemon juice and season with salt and pepper to taste.
