This is wholesome, easy, family and budget friendly and perfect for a fast dinner. You can also make this in a slow cooker if you are busy!

Ingredients

  • 300g chicken breast
  • 1 x tin chopped tomatoes
  • 50g tomato puree
  • 1 x sprig rosemary
  • 1 x tin butterbeans rinsed
  • 1 x red onion diced
  • 4 x cloves garlic
  • 1 x red chilli
  • 2 x carrots diced
  • 100g frozen petis pois
  • 100g light cream cheese
  • 100ml chicken stock
  • 100g chopped spinach
  • Chopped parsley
  • 1 x tsp wholegrain mustard

Method

  1. Heat your pan and add in olive oil.
  2. Sauté your onions, garlic and chicken.
  3. Add in your stock, chopped tomatoes, herbes, mustard and season with salt and pepper.
  4. Simmer for 10 minutes.
  5. Stir in your cream cheese and lemon juice and peas.
  6. Simmer for 5 minutes.
  7. Add in your chopped parsley , spinach and serve with some rice, pasta or potatoes
