This is wholesome, easy, family and budget friendly and perfect for a fast dinner. You can also make this in a slow cooker if you are busy!
Ingredients
- 300g chicken breast
- 1 x tin chopped tomatoes
- 50g tomato puree
- 1 x sprig rosemary
- 1 x tin butterbeans rinsed
- 1 x red onion diced
- 4 x cloves garlic
- 1 x red chilli
- 2 x carrots diced
- 100g frozen petis pois
- 100g light cream cheese
- 100ml chicken stock
- 100g chopped spinach
- Chopped parsley
- 1 x tsp wholegrain mustard
Method
- Heat your pan and add in olive oil.
- Sauté your onions, garlic and chicken.
- Add in your stock, chopped tomatoes, herbes, mustard and season with salt and pepper.
- Simmer for 10 minutes.
- Stir in your cream cheese and lemon juice and peas.
- Simmer for 5 minutes.
- Add in your chopped parsley , spinach and serve with some rice, pasta or potatoes
