Kevin Aherne's flavour-filled tacos: Today

Yes, Taco Tuesday is a thing and why not? It's fun, easy going and can be a lovely way to share around the table with different toppings and condiments to suit all the family. The protein is up to you. Chicken, steak, ground beef, pulled pork all work equally.

Ingredients

  • 500g ground beef
  • 10-12 soft or hard shell tacos
  • 1tsp cumin
  • 1 tsp coriander
  • 1 tsp curry powder
  • 1 tsp salt
  • 100g grated cheese – cheddar or mozzarella
  • 1 lime
  • Optional jalapeno peppers for Mom & Dad
  • Shredded lettuce
  • Cooked white rice for 4 people
  • Ranch or sour cream for the table
  • Salsa or hot sauce for the table

Method

This recipe is very very easy going. But it's great to get young kids involved. Simple lessons, grating cheese, opening and closing jars, squeezing lime. Setting the table with all the little condiments.

  1. Fry the beef in a wide based frying pan on a high heat for 6-8 minutes until browned
  2. Add the salt & spices and fry for another 2 minutes
  3. Heat the taco shells in oven until warm
  4. Grate the cheese, slice the lime, shred the lettuce, get your small bowls ready with the dips and sauces –
  5. Serve it up family style on the table for everyone to build their own taco how they like it.
  6. I would always serve up a carb with tacos and find rice is always a good filler for the kids.
