I've been feeding this to our family from a very young age. It's got all the ingredients you need for a very nutritious and delicious dinner for all the family. I've found getting the kids on wholegrain rice has been difficult so maybe start off with white rice or ½ & ½.
Ingredients
- 4 Salmon darnes – skin off
- 200g uncooked wholegrain or white rice – you can use a boil in the bag rice just fine
- 1 head of broccoli cut into florets
- 1 peeled carrot
- 2 eggs whisked
- 1 lemon or 1 lime
- 150ml reduced salt soy sauce
- Small knob of butter
- I tsp honey
Method
- Pre heat the grill and season the salmon with a little soy sauce
- Grill the salmon 10 minutes
- Cook the rice and leave to cool slightly – left over cool rice works best
- On a medium heat in a wide based add the butter to the pan & scramble the eggs
- Add the grated carrot, rice & soy to the pan – move the mixture in the pan with a wooden spoon to incorporate all the ingredients until the rice is warmed through.
- Steam or boil the broccoli for 3 minutes
- Squeeze a generous amount of lemon over the fish and broccoli and serve up with a little soy on the side mixed with honey for dipping the broccoli.
