Ketjap Manis Pork Stir Fry with Sweet Potato, Pak Choi and Cashews by Paul Flynn: Today
Ingredients
- 2 tbs sunflower oil
- 1 tsp toasted sesame oil
- 300g Pork loin chops, cut into 1cm strips
- 1 Sweet potato, peeled and cut into 1/2 cm batons
- 2 Red onions, peeled and sliced
- 1 thumb sized piece of ginger, peeled and shredded
- 2 cloves of garlic, peeled and sliced
- 1 lg red chilli, deseeded and chopped
- 2 Pak Choi, cut into quarters lengthways
- 50mls water
- 100mls Ketjap Manis or Teriyaki sauce
- Salt and pepper
- 100g cashew nuts
Method
- Heat the oils on a high heat in a wok till smoking then carefully add the pork.
- Cook for two minutes until it colours then add the sweet potato, red onions, ginger, garlic, chilli , Pak Choi and water.
- Cover and cook for five minutes on the highest heat turning the mixture once or twice.
- Remove the lid then allow the water to evaporate then add the Ketjap manis, salt, pepper and cashew nuts.
- Turn the mixture together until everything is coated and glossy.
- Serve straight away with rice or noodles
