Ketjap Manis Pork Stir Fry with Sweet Potato, Pak Choi and Cashews by Paul Flynn: Today

Ingredients

  • 2 tbs sunflower oil
  • 1 tsp toasted sesame oil
  • 300g Pork loin chops, cut into 1cm strips
  • 1 Sweet potato, peeled and cut into 1/2 cm batons
  • 2 Red onions, peeled and sliced
  • 1 thumb sized piece of ginger, peeled and shredded
  • 2 cloves of garlic, peeled and sliced
  • 1 lg red chilli, deseeded and chopped
  • 2 Pak Choi, cut into quarters lengthways
  • 50mls water
  • 100mls Ketjap Manis or Teriyaki sauce
  • Salt and pepper
  • 100g cashew nuts

Method

  1. Heat the oils on a high heat in a wok till smoking then carefully add the pork.
  2. Cook for two minutes until it colours then add the sweet potato, red onions, ginger, garlic, chilli , Pak Choi and water.
  3. Cover and cook for five minutes on the highest heat turning the mixture once or twice.
  4. Remove the lid then allow the water to evaporate then add the Ketjap manis, salt, pepper and cashew nuts.
  5. Turn the mixture together until everything is coated and glossy.
  6. Serve straight away with rice or noodles
