Ingredients

- 6 egg whites
- 2 tsp corn flour
- 300g caster sugar
- 2 tsp vanilla extract
- 2 tsp malt vinegar
- 300ml cream, whipped
- Punnet ripe raspberries
- 14 x 11 inch baking tray
Method
- Line a standard oven baking tray with parchment paper, preheat the fan oven to 150c
- Whip the egg whites using a stand or hand mixer, add the sugar in 3 stages while whipping until a thick, glossy meringue is formed
- Mix the vinegar, cornflour and vanilla extract into a paste and whisk this through the meringue for another minute
- Spread the meringue evenly across the parchment paper, approx. 1 inch thick
- Bake in the oven for 15 mins then remove from the pan and cover with a cloth until cooled.
- Dust a separate sheet of baking parchment with 50% cornflour and 50% icing sugar and carefully turn the meringue sheet onto it.
- Line the inside of the sheet with whipped cream and fruit, leaving a thumb sized gap around the edges.
- Using the baking parchment as support, roll the meringue over itself to create a cylinder. Slice and share
