This is a winner for many reasons. It is delicious, easy to make, fresh and you will feel great from it! Nice and light, but filling.
Ingredients
- 225g tiger prawns
- 200g light mayonnaise
- 50g sugar free ketchup
- 1 x red chilli diced
- 3 x pinch's of smoked paprika
- 1 x red onion finely diced
- Chopped coriander
- 1 x ripe avocado diced
- Juice of one lime
- Chopped ginger
- Chopped chives
- 1 x tsp Worcestershire sauce
- 2 x heads baby gem lettuce
Method
- Heat a large pan of water and add in one lemon.
- Simmer your prawns for 3-4 minutes until firm to touch and pink.
- Cool down under cold water and place in the fridge immediately.
- Mix mayonnaise, ketchup, paprika & Worcestershire sauce in a bowl with your lime juice and chopped ginger. Taste as you go.
- Peel your baby gem lettuce and place on a plate.
- Mix your prawns with diced red onion, avocado, chopped coriander and fill the baby gem cups or serve in a large glass
