Nico Reynolds' stuffed butternut squash: Today

Ingredients
- 1 butternut squash (halved and cored)
- 1 onion (finely diced)
- 3 cloves of garlic (minced)
- A tablespoon of grated ginger
- 25 grams of butter
- 100 grams of sausage meat
- 100 grams of white pudding
- 2 slices of smoked bacon
- Handful of sage
- 50 grams of bread crumbs
- Hand full of chopped parsley
Method
- Preheat the oven to 200°
- Drizzle a little oil over the squash and roast flat side down.
- Roast for 40 mins until its tender,
- As the squash is roasting; Sautee the sausage meat, bacon, white pudding until browned.
- Add the butter, onion, garlic and ginger and cook for 5-10 mins on a medium heat then add the sage and breadcrumbs.
- When the squash halves have cooked and are tender enough, scoop out a hollow little canal and spoon in the stuffing.
- Place the stuffed squash back into the oven and cook for another 45 minutes.
- Topped with the fresh parsley
- Can be cooked a reheated for serving.
