Ingredients

  • 1 butternut squash (halved and cored)
  • 1 onion (finely diced)
  • 3 cloves of garlic (minced)
  • A tablespoon of grated ginger
  • 25 grams of butter
  • 100 grams of sausage meat
  • 100 grams of white pudding
  • 2 slices of smoked bacon
  • Handful of sage
  • 50 grams of bread crumbs
  • Hand full of chopped parsley

Method

  1. Preheat the oven to 200°
  2. Drizzle a little oil over the squash and roast flat side down.
  3. Roast for 40 mins until its tender,
  4. As the squash is roasting; Sautee the sausage meat, bacon, white pudding until browned.
  5. Add the butter, onion, garlic and ginger and cook for 5-10 mins on a medium heat then add the sage and breadcrumbs.
  6. When the squash halves have cooked and are tender enough, scoop out a hollow little canal and spoon in the stuffing.
  7. Place the stuffed squash back into the oven and cook for another 45 minutes.
  8. Topped with the fresh parsley
  9. Can be cooked a reheated for serving.
