Tortilla 'hack' chilli beef and guacamole wraps

Ingredients

Serves 4

  • 200g lean beef mince
  • 2 tsp cumin
  • 2 tsp chilli flakes
  • 2 tbsp soy sauce
  • 4 white sandwich wraps
  • 6 tbsp thick crème fraiche
  • 2 packed corn tortilla chips
  • 2 lime
  • 2 avocado
  • 1 red onion, finely diced
  • Generous handful coriander
  • Generous handful grated cheddar cheese

Method

1. Start with your beef, place a non stick pan on the heat and add a touch of vegetable oil. Add your mince and allow it to brown all over.

2. Once brown, reduce the heat slightly, season with the cumin, chilli flakes and soy sauce. Set aside for assembling the wraps.

3. Now make your guacamole. Remove the green pulp and add to a mixing bowl. Bash it up with the back of a fork.

4. Season the avocado with lime juice, zest, ripped coriander leaves, the diced onion and some salt. Set aside for assembly.

5. To assemble, place the sandwich wrap flat on a board, using a knife cut a single line from the bottom of the wrap straight up to the centre.

6. Using the 4 quarters as a guide, assemble your ingredients. 1 quarter with warm mince, 1 with guacamole, 1 with grated cheese and the last with crème fraiche and some crushed corn tortilla chips.

7. Assemble into a wrap by folding the bottom quarters upward to make a half moon, and then across into a pizza slice shape where all the filings are layered but don't fall out.

8. You can eat immediately or wrap in tinfoil to hold its heat and allow the cheese to melt slightly.
