Mags Roche's American pancakes with vanilla skyr, summer berry compote, maple pecan nut crumb: Today

Ingredients

Serves: 12-15 pieces

  • 200 g flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • Salt tsp salt
  • 30 g sugar
  • 2 eggs
  • 170 g Ísey Skyr vanilla
  • 160 ml milk
  • 1 teaspoon vanilla drops

Summer berry compote

  • 5 apples
  • 150g caster sugar
  • Blackberries/blueberries/ strawberries/ raspberries

Method

  1. Put all the dry ingredients together in a bowl and stir together.
  2. Mix eggs, skyr, milk and vanilla drops together and stir well.
  3. Mix the dry ingredients together and stir until everything is well mixed.
  4. Put butter in a pan over medium-high heat and bake the pancakes.
  5. Serve with syrup, cream, blueberries and strawberries, or whatever your heart desires.

Pecan nut crumb

  1. Pour maple syrup over pecan nuts.
  2. Place on a tray with parchment paper/ mix well so the nuts are coated with the maple syrup.
  3. Cook at 180 degrees for 15 mins.
  4. Leave to cool- chop roughly

Summer berry compote

  1. Peel apples and cut into small dice
  2. Place in a pan with caster sugar, cook on a low heat until apples are soft.
  3. Add the berries/ you can Also use frozen berries which work very well.
  4. Mix all together, leave to cool.
