- 360g plain flour
- 200g caster sugar
- 170g light brown sugar
- 200g salted butter
- 1 egg
- 1 egg yolk
- 1 heaped tsp baking powder
- 200g dark chocolate
- 100g roasted pistachio nuts
Method
- Preheat the oven to 170c
- Mix the flour and baking powder in a bowl
- Place the butter, caster and brown sugar in a separate bowl and cream until light and smooth
- Now add the eggs and mix, followed by the flour and fold together.
- Chop the dark chocolate and pistachio nuts into a rough dice and fold through the mix. Chill this in the fridge for an hour
- Next, roll the dough into small balls in your hands, just smaller than a golf ball
- This can be placed in a container and frozen down. Cook straight from the freezer with the timings below
- From frozen: 15mins at 170c
- From fridge: 10mins at 170c
