Off Duty Chef: dark chocolate cookies

Ingredients

Makes 20

  • 360g plain flour
  • 200g caster sugar
  • 170g light brown sugar
  • 200g salted butter
  • 1 egg
  • 1 egg yolk
  • 1 heaped tsp baking powder
  • 200g dark chocolate
  • 100g roasted pistachio nuts

Method

  1. Preheat the oven to 170c
  2. Mix the flour and baking powder in a bowl
  3. Place the butter, caster and brown sugar in a separate bowl and cream until light and smooth
  4. Now add the eggs and mix, followed by the flour and fold together.
  5. Chop the dark chocolate and pistachio nuts into a rough dice and fold through the mix. Chill this in the fridge for an hour
  6. Next, roll the dough into small balls in your hands, just smaller than a golf ball
  7. This can be placed in a container and frozen down. Cook straight from the freezer with the timings below
  8. From frozen: 15mins at 170c
  9. From fridge: 10mins at 170c
