Watch Off Duty Chef on Tuesday 20th December at 6.30pm on RTÉ One.


  • 400g strong flour
  • 40g sugar
  • 5g salt
  • 100ml milk
  • 1 packet fast action yeast
  • 4 medium eggs
  • 100g butter (soft to touch)


  1. Place the flour, sugar, yeast and salt in a mixer and mix to distribute
  2. Warm the milk to just above hand temperature and add to the dough.
  3. Add the eggs one by one and mix on medium speed for 3mins, then add your soft butter. Mix for a further 10 mins until the dough is shiny and glossy. Place in a greased bowl and leave to double in size
  4. Knock back the dough on a floured surface then shape and portion into 3 equally sized balls
  5. Brush a baking tin with softened butter.
  6. Roll the balls on the workbench to tighten the dough then place in the loaf tin. Cover and allow to double in size.
  7. Once doubled, brush with egg yolk and bake at 185c for 20 mins until golden brown.
