Ingredients

- 2 turkey legs, split into drumsticks and thigh
- Sea salt
- Olive oil
- 100g leftover stuffing mix
- 1 large sourdough baguette
- 50g mayonnaise
- 2 large cornichons
- Handful tarragon
- Handful rocket leaves
Method
1. Preheat the oven to 200c
2. Place the tin foil on a tray, add the turkey legs and season with salt and olive oil
3. Cook for 1 hour until the meat reaches an internal temperature of 75c or above
4. Remove the skin and pick the meat away in large chunks.
5. To make the mayo, dice the cornichons and chop the tarragon, fold this through
the mayonnaise, and season with salt and lemon.
6. Slice the sourdough baguette in half. Spread the stuffing mix on the base layer and toast under the grill.
7. Dress the turkey meat with the mayo and place it on top of the stuffing. Finish with some rocket leaves and slice. The turkey mix will last for 3 days in the fridge
