Ingredients

  • 100g pudding rice
  • 700ml full-fat milk
  • Peel of 1 orange
  • 1 cinnamon stick or a pinch of cinnamon
  • 1/2 teaspoon salt
  • 100ml cream
  • 100g greek yogurt
  • 20g icing sugar

Poached pears

  • 2 pears, peeled and deseeded

Mulled wine

  • 1 bottle of red wine
  • 100g caster sugar
  • 1 lemon/lime/clementines
  • Spices - as you prefer (cinnamon/star anise/ nutmeg/ vanilla pod)
  • 3 bay leaf

Method

  1. Preheat the oven to 150 degrees
  2. Mix all the above ingredients in a dish and place in the oven for about an hour and half, stirring after 40 minutes.
  3. When the rice is cooked, most of the milk should be absorbed, and rice should hold its shape. let the rice cool completely, cool in the fridge until ready to use.

Mulled wine poached pears

  1. Mix all the ingredients in a saucepan and slowly bring up to a simmer. When it's at a simmer, add the ripe pears to the liquid and cover until cooked, about 10 minutes.
  2. When the pears are cooked carefully take out the liquid and let cool slightly.
  3. Whip the cream and icing sugar together until stiff fold the cream into the cold rice pudding, followed by the yogurt place into a serving bowl or glass, place slices of poached pears on top with a little cooking juices sprinkle with a little ginger nut crumb or toasted almonds for texture.
