Kevin Aherne's slow cooker chicken tacos

Ingredients

Stress free is the name of the game for this easy mid-week meal that will be ready to go when you get home from work. If you don't have a slow cooker, you can follow the steps and use your oven instead. Take all the work away by letting everyone assemble their own tacos which will give you more time to relax after those busy days.

  • 6-8 boneless chicken thighs
  • 2 limes
  • 1 bottle of your favourite hot sauce
  • 2 tbsp honey
  • Bunch fresh coriander
  • 8-10 soft shell tacos or mini tortilla wraps
  • Some grated or crumbled cheese (optional)
  • Shredded gem lettuce
  • Ranch or sour cream for the table
  • A jar of jalapeno peppers

Method

  1. Marinade the chicken thighs in 6 tbsp hot sauce, honey & juice & zest of 1 lime and season with a tsp of salt & pepper.
  2. Place in the slow cooked with a lid on. They will need at least 6-7 hrs in the cooker on a low heat. If you don't have a slow cooker follow the same step place in the oven in a tray covered with tin foil & slowly cook at 170 for 3hrs.
  3. Before removing the chicken from the cooker – shred it up with a fork & squeeze the juice from the remaining lime over the chicken.
  4. Serve it up in a bowl along with a bowl of each jalapenos, fresh coriander & some crumbled cheese for everyone to assemble their own. Not forgetting the hot sauce.
