Nico's zesty Argentine chimichurri recipe

Ingredients

  • 3 handfuls of parsley
  • 1 bulb of garlic
  • 2 tbsp dried oregano
  • 2 tbsp paprika
  • 2 tbsp chilli flakes
  • 100mls vinegar
  • 50mls olive oil

Method

  1. Finely dice the garlic with the parsley and mix with salt and pepper.
  2. In a bowl hydrate the oregano with the vinegar and chilli flakes to let them bloom (3mins).
  3. Mix in the paprika and the parsley and garlic.
  4. Pour in the olive il and mix – do not blend!
  5. This will keep in the fridge for 2-3 weeks in a sealed container.
