A zingy sauce that pairs wonderfully with meat, fish, anything really!
Ingredients
- 3 handfuls of parsley
- 1 bulb of garlic
- 2 tbsp dried oregano
- 2 tbsp paprika
- 2 tbsp chilli flakes
- 100mls vinegar
- 50mls olive oil
Method
- Finely dice the garlic with the parsley and mix with salt and pepper.
- In a bowl hydrate the oregano with the vinegar and chilli flakes to let them bloom (3mins).
- Mix in the paprika and the parsley and garlic.
- Pour in the olive il and mix – do not blend!
- This will keep in the fridge for 2-3 weeks in a sealed container.
