Ingredients

Makes about 20 biscuits

Applesauce

  • 4 medium cooking apples peeled and cored
  • 2 tablespoons
  • 1 teaspoon lemon juice
  • 1 tablespoon sugar

Biscuits

  • 100g butter at room temperature
  • 200g Brown sugar
  • 1 large egg
  • 250 Flour
  • 1 ½ teaspoons of baking powder
  • ¼ Bread soda
  • ¾ teaspoon cinnamon
  • ¼ teaspoon of salt
  • 200g Applesauce

Method

Applesauce

  1. In a medium pot add the apples, water and lemon juice, cover and cook low until apples are soft.
  2. Add the sugar and mash with a fork into a puree, continue cooking on a low eat until you have a thick puree, allow to cool and refrigerate.

Biscuits

  1. Preheat the oven to 200.
  2. Mix the in a large bowl.
  3. Cream together the butter, brown sugar and egg, stir in the flour, baking powder, bread soda, cinnamon , salt and apple sauce until just combined.
  4. Spoon golf ball sizes of the dough onto lined baking trays, bake for 10 minutes until slightly golden.
  5. Cool on a wire rack.
  6. Dust with icing sugar before serving.
