Rory's Yellow Tomato and Lime or Lemon Basil Salad

Ingredients

Serves 4

  • 500g ripe and firm yellow tomatoes, different varieties if possible
  • Sea salt and freshly ground pepper
  • 3 tablespoons extra virgin olive oil
  • I -2 tablespoons lemon juice
  • 1-2 teaspoons runny honey
  • 12 lime or lemon basil leaves
     

Method

  1. Cut the tomatoes into slices and chinks, not less than 1 cm thick. Lay out in a single layer and season with salt and pepper. Whisk the oil, lemon juice and honey together.
  2. Chop or tear the basil and scatter over the tomatoes.
  3. Immediately spoon the well-whisked oil mixture over the tomatoes as evenly as possible.
  4. Tease the dressing through the tomatoes with your fingers.
  5. Taste one piece of tomato to make sure you are happy with the flavour and seasoning. Serve as soon as possible.
