This is a simple and fresh-tasting salad that should be eaten immediately after assembling. Ensure your tomatoes are both firm and ripe.
Ingredients

- 500g ripe and firm yellow tomatoes, different varieties if possible
- Sea salt and freshly ground pepper
- 3 tablespoons extra virgin olive oil
- I -2 tablespoons lemon juice
- 1-2 teaspoons runny honey
- 12 lime or lemon basil leaves
Method
- Cut the tomatoes into slices and chinks, not less than 1 cm thick. Lay out in a single layer and season with salt and pepper. Whisk the oil, lemon juice and honey together.
- Chop or tear the basil and scatter over the tomatoes.
- Immediately spoon the well-whisked oil mixture over the tomatoes as evenly as possible.
- Tease the dressing through the tomatoes with your fingers.
- Taste one piece of tomato to make sure you are happy with the flavour and seasoning. Serve as soon as possible.
