Tonight on Grow Cook Eat, Jack Kirwan from Sprout makes a Stupidly Green Salad with a Trio of Dressings.


Cook time: 20 mins
Serves: 2

  • 200g mixed salad leaf
  • 75g Sugar snap peas 
  • 1 x Apple
  • 100g Radishes 

Yoghurt & Herb Dressing 

  • 50 ml  Yoghurt 
  • 10 Mint Leaves
  • ½ Garlic 
  • ½  Lemon juice and zest 
  • 25 ml Maple Syrup

Apple and Watercress Dressing

  • 75 ml Apple Juice 
  • 75 ml Olive oil 
  • 25 ml Apple Cider Vinegar 
  • 1 tsp Wholegrain mustard 
  • 15g Sugar 

Stupidly Green Dressing

  • 25g Parsley 
  • 25g Lovage 
  • ½ clove Garlic 
  • 75-100ml sunflower oil 
  • 1 tsp wholegrain mustard
  • 1 tblsp white wine vinegar


Salad Prep

  1. Take all the salad greens from the garden and wash
  2. Tear the leaves and put in a bowl. 
  3. Julienne the apple and shave the radish thinly then mix in the bowl. Serve with your choice of dressings. 

Yoghurt Dressing

  1. Finely chop the mint and crush the garlic clove
  2. Put the yoghurt into a mixing bowl
  3. Add the mint, garlic, lemon juice, zest and maple juice and mix together
  4. If too thick add some water. Season to taste.

Apple Dressing 

  1. Juice the apple
  2. Bring the apple juice, sugar and apple cider vinegar to the boil and reduce until syrup like. 
  3. Add the olive oil, mustard and watercress together and whisk until complete.
  4. Add more apple juice if it is too thick. 

Stupidly green 

  1. Blend the herbs and garlic with the sunflower oil for 7 minutes until completely broken down and green in colour, whisk in the mustard and vinegar and season to taste.
