Rosemary Steak with Green Beans and Mushrooms from Operation Transformation.
Ingredients
Serves: 2
- 2 sirloin steaks, 125g each
- 200g green beans
- 200g button mushrooms, sliced
- 1tbsp olive oil
- 4 sprigs rosemary
- 3 tsp butter
- 1 onion, diced
- 120ml chicken stock
- 1 clove garlic
- 200g baby potatoes
- Salt and pepper to season
Method
- Season steaks with a little salt and pepper
- Steam potatoes until cooked (15-20 minutes)
- Add oil to a pan on high heat
- When oil is hot, add steaks & 2 sprigs of rosemary to pan
- Cook as desired, turning steaks every minute (6 mins = rare, 8 mins = medium, 10 mins = well done)
- Transfer steaks to a warm plate and allow to rest
- To the same pan add butter over a medium heat
- When butter is melted add onions and cook until soft
- Add mushrooms and cook for 2 minutes
- Add garlic and cook until mushrooms are browned
- Add green beans and chicken stock and simmer until beans are cooked through but still slightly crisp (2-3 mins)
- Serve steak with vegetables and potatoes, garnish with rosemary sprigs
