Ingredients
Serves: 4 (two portions for today and two to freeze for later!)
- 400g minced beef
- 40g butter
- 50ml low fat milk
- 25g plain flour
- 2 onions, finely chopped
- 2 carrots, finely chopped
- 2 sticks of celery, finely chopped
- 100g frozen peas
- 2 cloves of garlic, crushed
- 500ml chicken stock
- 1 tbsp tomato purée
- 2 tbsp Worcestershire sauce
- 500g potatoes, peeled and chopped
Method
- Heat oven to 180C/ 160C Fan/ 350F /gas 4
- Place potatoes in a pot with enough cold water to cover them and bring to boil
- Turn down heat and simmer gently until potatoes are soft
- Drain the water. Add milk, butter, and mash well. Set aside for later
- Melt half the butter in a pan over a medium heat
- Add onions, celery, carrots, and garlic and cook for 5 minutes until soft
- Increase heat to high and add minced beef, stirring until well browned
- Stir in the flour and cook for 1 minute
- Add the chicken stock, tomato puree, Worcestershire sauce, and peas
- Bring to the boil then reduce heat and simmer for 5 - 7 minutes
- Place mince mixture into ovenproof dish and top with mashed potato
- Bake for about 30 minutes until golden on top
