Steak and Baked Potato recipe from Operation Transformation.

- 400g rooster potatoes (2 medium)
- 250g sirloin steak, sliced into strips
- 1 bunch spring onions, chopped
- 1 red pepper, deseeded and chopped
- 10 mushrooms, sliced
- 4 tablespoons sweetcorn

- 4 tablespoon oyster sauce
- 2 teaspoon reduced sodium soy sauce
- 1 tablespoon honey
- 1 tablespoon rapeseed oil
- 1 tablespoon ginger
Method
- Preheat oven to 220C /200C Fan
- Place 2 medium potatoes on a baking tray - pierce with fork and bake for 45 minutes until cooked through
- To make the marinade combine the oyster sauce, soy sauce and honey in a bowl
- Add the steak strips to the bowl and coat with the marinade
- Add the rapeseed oil to a pan over medium heat and add the spring onions, chopped pepper, mushrooms, sweetcorn and ginger and cook for approximately 5-7 minutes
- Add the beef strips and cook until meat is cooked through for a further 5-7 minutes
- Take baking tray with potatoes out of oven and serve alongside the beef and vegetable mix
