Ingredients

Serves: 2

  • 100g wholewheat pasta
  • 2 large garlic cloves, peeled and finely chopped
  • 1 large red chilli, de-seeded and finely chopped
  • Sprig of fresh parsley
  • 1 aubergine, diced
  • 100g spinach
  • 1 yellow pepper, de-seeded and chopped
  • 2 tbsp grated parmesan

Food Staples

  • 2 tsp of olive oil
  • Ground black pepper, to taste (optional)


Cook pasta according to packet instructions.

Heat the oil in a pan and add the aubergine.  Season with black pepper if desired.

Add the chopped peppers and cook at medium heat until tender. 

Add the garlic and chilli and cook for 2 more minutes.

Then add the spinach and cook until wilted.

Mix with drained pasta and garnish with fresh parsley and grated parmesan.
