Ingredients

Fancy taking your Christmas cheer to next level? These easy to make biscuits from Delicious Circle are bound to impress at the dinner table. And anyway, who can say no to shortbread?
Shortbread

  • 200g Unsalted Butter (Softened) 
  • 100g Caster Sugar 
  • 200g Plain Flour 
  • 100g Cornflour
  • A Pinch of Salt

Decorations

  • 100g Unsalted Pistachios  70g Dried Cranberries
  • 3-4 heaped Tbsp Icing Sugar
  • Cold Water

Method

  1. Line 2 baking trays and set aside for later.
  2. Beat the butter and sugar together in a bowl until it becomes pale and fluffy. I do this using a freestanding mixer with a paddle attachment, you could also use a handheld mixer or do it by hand with a wooden spoon and some elbow grease.
  3. Combine the dry ingredients and sift into the butter mixture. Mix these together until combined.
  4. Flour your worktop/any flat, clean surface and knead the dough slightly to ensure all the ingredients are combined and it is a soft manageable dough.
  5. Grab a rolling pin and roll out the dough to about 1cm thickness.
  6. Cut out your wreaths using two circular cookie cutters one large and one small. You can use two glasses if you do not have cutters, they will work just as well!
  7. Pop your wreaths onto the prepared baking trays and chill in the fridge for a minimum of 30 mins.  Chilling them helps to keep their shape.
  8. Preheat your oven to 170℃.Christmas Wreath Biscuits!
  9. Stick the trays into the oven and bake your biscuits for around 20 mins or until they go golden brown.
  10. Remove from the oven and cool on a wire rack.
  11. Whilst they cool get your decorating bits ready to go! Chop the pistachios and cranberries, these don’t have to be uniform, actually the less uniform the better.
  12. Mix the Icing sugar and water. The consistency you want to get is a loose paste, add a little water at a time to get this. If you go too far with the water don’t worry, just add in some more icing sugar.
  13. When the biscuits are nice and cool you can decorate. Using a teaspoon spoon and spread the icing onto the biscuits then sprinkle the pistachios and cranberries on top.
  14. Allow the icing some time to set.
  15. When the icing is dry you can eat them, serve to friends or package them up as a perfect gift for your loved ones this Christmas!
