Ingredients

  • 175g porridge oats
  • 50g flour (can use wholemeal, spelt or a mix)
  • 50g coconut oil
  • 1 tbsp. honey
  • 1 beaten egg
  • 1 ripened, mashed banana
  • 50g raisins
  • 2 drops vanilla extract

Method

1. Preheat oven to 180 º C

2. Line a baking tray with parchment paper

3. Add all of the dry ingredients to a bowl

4. Melt the coconut oil in a pan and add the raisins

5. Add this to the dry ingredients, along with the beaten egg, vanilla and honey

6. Spoon the mixture into the tin and flatten with the back of a spoon

7. Bake for 25 minutes, remove from oven and allow to cool slightly before cutting
