Ingredients

  • 4 free range chicken breasts, cut into small pieces
  • 1 onion, sliced
  • 1 garlic clove, smashed
  • 1 pineapple, fruit cut into bite-sized pieces, outer husk reserved
  • 400g rice
  • 1 bay leaf
  • 1 pinch saffron
  • A handful of fresh coriander, chopped
  • 100ml soy sauce
  • 100ml mirin
  • 1tsp starch
  • Rice wine vinegar, to taste
  • 50g butter
  • Sea salt
  • Rapeseed oil

Method

1. To cook the rice: place the rice in a pot with the bay leaf and saffron. Cover with 2.5 times the amount of water. Bring to the boil and simmer until the water has evaporated. Take the rice of the heat and fluff with a fork.

2. For the sauce: place the soy sauce, mirin and starch into a pot and bring to the boil. Reduce until the sauce thickens slightly. Season to taste with the vinegar and sea salt.

3. In a large pan, heat some oil. Fry the onion until translucent. And the garlic and the chicken. Cook the chicken until nicely browned on all sides. Add the pineapple and the butter and cook for a further minute. Season to taste.

4. Remove from the heat and mix the chicken and the sauce together. Fold half the coriander though the rice. Serve the chicken in the carved-out pineapple. Garish with the left over coriander.
