Today show chef Richy Virahsawmy serves up this mouth-wateringly tasty and yet still healthy salmon dish - the description alone sounds amazing...Sesame Crusted Salmon, Red Pepper and Green Bean Salsa. Mmmm...
Ingredients:
- 2 x 180g Salmon fillets
- 200 g sesame seeds
- 2 tablespoons extra virgin olive oil
- Sea salt / pepper
Red pepper & green bean salsa:
- 1 Red pepper
- 100 g green bean ( blanched & refreshed)
- ½ small red onion
- 2 cloves garlic
- 4/6 tablespoons extra virgin olive oil
- 5g basil leaves
- 5 g coriander leaves
- Spring onion choppe
- ¼ lemon juice
- 1 tablespoon sherry vinegar
Method:
Salsa:
- Blanch and refresh green beans
- Chop all ingredients
- Mix together
- Add extra virgin olive oil & sherry vinegar
Sweet potato mash:
- Peel sweet potatoes, chop small and boil until tender (15-20 mins)
- Drain and add butter, nutmeg, salt & pepper.
- Finish with dash of cream.
Salmon:
- Sprinkle Salmon fillet with sesame seeds
- Pan roast in non stick pan.
- Transfer to oven 190degrees for 7-10 mins.
