Chili: Operation Transformation Food Plan

Operation Transformation's Food Plan includes a range of delicious dinner options including this healthy, low-fat Chili recipe.

Ingredients:

  • 2 tablespoon rapeseed oil
  • 1 medium sweet potato, chopped (240g)
  • 1 red pepper, chopped 
  • ½ onion, chopped
  • 2 cloves of garlic, chopped
  • 2 teaspoon paprika
  • ½ teaspoon chilli powder
  • 500g extra lean ground beef
  • 400g black beans (240g drained)
  • 400g canned chopped tomatoes
  • 240ml beef stock 
  • 1 tablespoon unsweetened cocoa powder
  • ½ bunch coriander, chopped
  • Salt and pepper

For Topping:

  • 40g 3% fat natural yogurt
  • 40g cheddar cheese, grated

 
Method:
1.    Preheat oven to 190C.

2.    In a bowl toss the sweet potatoes and peppers with a tablespoon oil.  Season with salt and pepper if desired and spread out in a single layer on the baking sheet.

3.    Put in oven and roast until tender - about 20 - 30 minutes.

4.    In a large pot add 1 tablespoon oil over medium - high heat.  Add onion, stirring often until soft.

5.    Now stir in the garlic, paprika and cumin and cook for a further few minutes.

6.    Add the mince meat, and cook until it browns. 

7.    Add in the beans, tomato, stock and cocoa and stir. Bring to a gentle simmer.

8.    Remove the roasted peppers and potatoes from the oven and add to the pot and stir.

9.    Serve each portion with a spoon of natural yogurt and cheese and sprinkle with corriander.
