JP McMahon's dish from the Today Show on Thursday January 7, 2016. Only 300 calories too - nice one.
Ingredients:
- 4 free-range chicken breasts, seasoned
- 4 chicory, halved
- 50g walnuts, roasted
- 50g goat’s cheese, crumbled
- Some nice salad leaves
- Sea salt
- Olive oil
- Malt vinegar
Method:
- In a medium frying pan, fry the chicken in a little olive oil. Place in a warm oven until the core temperature has reached 65˚C (it will be firm to touch). Remove from the oven and rest in a warm place. Carve when plating.
- Brush the chicory leaves with some olive oil and grill until nicely charred.
- For the salad: mix the leaves with the walnuts and dress with some olive oil and malt vinegar.
To serve:
Place some salad on the plate and sprinkle over the goat’s cheese. Arrange the carved chicken and the chicory around the salad. Finish with a little grated walnut.
