The Taste of Success judge JP McMahon shares his tasty starter with Maura and Dáithí on The Today Show.

Ingredients

  • 1 x ciabatta loaf
  • Olive oil
  • 200g Irish blue cheese, crumbled
  • 2 beetroots, cooked and sliced thinly on a mandolin
  • 125ml malt vinegar
  • 85g sugar
  • Fresh coriander, to garnish
  • Sea salt

Method:

  1. To make the pickle: Place the sugar and the vinegar in a small pot and warm until sugar dissolves. Allow to cool.
  2. Place the sliced beetroot in the vinegar and allow to macerate.
  3. Cut the ciabatta into slices and dress with a little olive oil.
  4. Place the beetroot slices on the ciabatta slices and sprinkle the blue cheese over the toasts.
  5. Grill for a few minutes until cheese melts and the toast is crunchy. Garnish with a little coriander and extra olive oil.
