The Taste of Success judge JP McMahon shares his tasty starter with Maura and Dáithí on The Today Show.
Ingredients
- 1 x ciabatta loaf
- Olive oil
- 200g Irish blue cheese, crumbled
- 2 beetroots, cooked and sliced thinly on a mandolin
- 125ml malt vinegar
- 85g sugar
- Fresh coriander, to garnish
- Sea salt
Method:
- To make the pickle: Place the sugar and the vinegar in a small pot and warm until sugar dissolves. Allow to cool.
- Place the sliced beetroot in the vinegar and allow to macerate.
- Cut the ciabatta into slices and dress with a little olive oil.
- Place the beetroot slices on the ciabatta slices and sprinkle the blue cheese over the toasts.
- Grill for a few minutes until cheese melts and the toast is crunchy. Garnish with a little coriander and extra olive oil.
