The Taste of Success judge JP McMahon shares his tasty starter with Maura and Dáithí on The Today Show.

Ingredients

  • 4 chicory heads
  • 300g Irish prawns, cooked and peeled
  • 2 avocados, stoned, peeled, and purée
  • 2 tsp apple balsamic vinegar
  • 2 tsp finely chopped lovage
  • Extra virgin rapeseed oil
  • Sea salt
  • Water cress, to garnish

Method

  1. Separate the chicory heads into leaves. Divide the prawns, avocado purée and a few sprigs of watercress between them.
  2. Whisk together the rapeseed oil, apple balsamic vinegar and finely chopped lovage and drizzle a little over each filled chicory leaf.
