Ingredients
- 4 chicory heads
- 300g Irish prawns, cooked and peeled
- 2 avocados, stoned, peeled, and purée
- 2 tsp apple balsamic vinegar
- 2 tsp finely chopped lovage
- Extra virgin rapeseed oil
- Sea salt
- Water cress, to garnish
Method
- Separate the chicory heads into leaves. Divide the prawns, avocado purée and a few sprigs of watercress between them.
- Whisk together the rapeseed oil, apple balsamic vinegar and finely chopped lovage and drizzle a little over each filled chicory leaf.
