The Taste of Success judge JP McMahon shares his tasty starter with Maura and Dáithí on The Today Show.

Ingredients

  • 16 soft, dried figs
  • 50g Irish cream cheese
  • 8 slices Iberian ham
  • A small handful chopped flat-leaf parsley
  • Extra virgin olive oil

Method

  1. Remove the hard core from the dried figs. Cut a pocket in each with the point of a knife, then stuff each pocket with a little bit of cream cheese.
  2. Cut the Iberian ham in half lengthways, then wrap up each stuffed fig into a little parcel. Secure together with a cocktail stick. Serve on a little platter scattered with a small handful chopped parsley and some rapeseed oil.
