Pork Chops with Cider

Juicy pork chops with cider sauce and potatoes.

Ingredients

  • 4 pork chops
  • 400 g baby potatoes
  • 4 plums, diced
  • 4 sage leaves, chopped
  • 250 ml cider
  • butter
  • oil
  • sea salt

Method

  • Cook the baby potatoes in simmering water until soft. Drain and allow to cool. When cool cut into wedges. Just before serving, warm in the oven.
  • For the pork: season the pork with sea salt. Heat a little oil in a large frying pan and sear the chops on both sides until nicely coloured. Baste with some butter and then place in 100 degree oven for 10 mins.
  • To make the sauce, deglace the pan with the cider and reduce by half. Add the diced plum into the cider and warm through. Finally, add the chopped sage into the sauce.
  • To serve: place some potatoes on a plate and place a pork chop over them. Pour the sauce over the pork. Finish with a little fresh sage.
