Ingredients

Lot 1

  • 225 g plain cream flour
  • 175 g margarine or butter (at room temperature)
  • 175 g light muscavado sugar
  • 4 large eggs
  • rind of 1 lemon
  • rind of 1 orange
  • 0.5 tsp mixed spice
  • 0.5 tsp nutmeg
  • 2 tblsp whiskey (optional)

Lot 2

  • 500 g packet fruit mix
  • 100 g tub cherries
  • 100 g tub mixed peel
  • 100 g chopped almonds
  • 100 g ground almonds
  • tin size: deep 8"/19cm round or 7"/18cm square tin

Method

  1. Preheat oven to 120C/220F/Gas ½ .
  2. Line the tin with a double layer of baking parchment.
  3. Place all the ingredients from Lot 1 into a large mixing bowl and beat until smooth.
  4. Mix Lot 2 ingredients together and add to Lot 1. Stir until well combined.
  5. Transfer to the prepared tin. Smooth top.
  6. Bake for 4 hours approximately. Check at intervals after 2 ½ hours as ovens vary.
  7. Leave cake until cold.

To decorate

  1. Brush with heated jam or honey and cover with marzipan. Leave for 24 hours to set.
  2. Brush marzipan with a little alcohol and cover with icing.
  3. Decorate as liked.
