A delicious and simple cake to prepare for Christmas.
Ingredients
Lot 1
- 225 g plain cream flour
- 175 g margarine or butter (at room temperature)
- 175 g light muscavado sugar
- 4 large eggs
- rind of 1 lemon
- rind of 1 orange
- 0.5 tsp mixed spice
- 0.5 tsp nutmeg
- 2 tblsp whiskey (optional)
Lot 2
- 500 g packet fruit mix
- 100 g tub cherries
- 100 g tub mixed peel
- 100 g chopped almonds
- 100 g ground almonds
- tin size: deep 8"/19cm round or 7"/18cm square tin
Method
- Preheat oven to 120C/220F/Gas ½ .
- Line the tin with a double layer of baking parchment.
- Place all the ingredients from Lot 1 into a large mixing bowl and beat until smooth.
- Mix Lot 2 ingredients together and add to Lot 1. Stir until well combined.
- Transfer to the prepared tin. Smooth top.
- Bake for 4 hours approximately. Check at intervals after 2 ½ hours as ovens vary.
- Leave cake until cold.
To decorate
- Brush with heated jam or honey and cover with marzipan. Leave for 24 hours to set.
- Brush marzipan with a little alcohol and cover with icing.
- Decorate as liked.
