Jacinta's childhood favourite inspired dish from MasterChef Ireland
Ingredients
- handful chives
- rosemary
- thyme
- parsley
- 1 tsp lovage)
- zest 1 lemon
- 2 chicken fillets and 2 chicken wings
- 4 carrots
- 1 red onion
- 1 white onion
- 1 celery stick
- 1 cup flour
- 1 cup milk
- 1 egg
- pinch of salt
- 0.5 pint chicken stock
- 0.5 cup white wine vinegar
- 2 tblsp brown sugar
- 2 slices parma ham
Method
- Preheat Oven to 180°C
- Marinade chicken for 20 minutes in 2 tablespoon oil, 1 tablespoon vinegar, 1 tablespoon Brown Sugar, Lemon Zest, Salt, Pepper & a teaspoon of each herb
- Make pancake batter & put in fridge to rest
- Fry onions, celery and carrots in butter and oil and add a little sugar (until soft then leave aside)
- Poach chicken fillet in stock for 20 minutes
- Fry chicken until a little golden
- Then put in the oven for 10 minutes
- Take out, sprinkle with brown sugar and lemon zest and cook for 5 minutes
- Fry Parma until crisp
- Cook pancake on hot pan
- Wrap vegetable in pancake, and then hold in place with Parma ham.
- Slice chicken and dress plate
- Reduce the marinade juices from pan, pour over and serve.
