Tuna with wasabi, crème fraiche and pickled salad

From episode three of MasterChef Ireland 2012

Ingredients

  • 1 tuna steak
  • 0.5 tsp wasabi paste
  • 3 tsbp crème fraiche
  • radish
  • 1 large cucumber
  • 3 tblsp sesame seed oil
  • 1 tblsp honey
  • 1 tblsp mint
  • 0.5 cup rice vinegar
  • 0.5 cup caster sugar
  • star anise
  • sesame seeds- enough to coat
  • coriander- bunch
  • mint-bunch
  • 1 tblsp Mirin
  • 0
  • 4 Soy Sauce

Method

  • Mix sesame seed oil, honey, soy sauce and mirin into bowl
  • Put tuna steak into sauce to marinate for approx 10 mins
  • Slice the cucumber and radish and set aside
  • Mix the sugar and rice, vinegar and star anise in saucepan and bring to the boil.
  • Reduce by at least half and then cool
  • Coat the cucumber and radish in sauce, add coriander and mint
  • Mix the wasabi and crème fraiche together
  • Remove the tuna and coat in sesame seeds.
  • Panfry for a few minutes on each side just searing the tuna
  • Remove from heat, plate
