The classic French vinaigrette.


  • 1 clove garlic
  • 1 tsp fine sea salt
  • 1 tsp sugar
  • 20-30 grinds of the pepper mill
  • 1 tsp french mustard
  • 1 tblsp cider or wine vinegar
  • 4 tblsp olive oil


  • With the tip of a sharp knife crush the peeled clove of garlic into the salt in the base of your salad bowl.
  • Mix in the sugar, pepper, mustard and vinegar.
  • When these are amalgamated, stir in the olive oil until you obtain a smooth emulsion.
