A great way to add flavour to meat.


  • 125 g unsalted butter (softened)
  • dash of lemon juice
  • 2 shallots (finely chopped)
  • salt and pepper


  • Mix all the ingredients together, then shape into a roll and cover with clingfilm and chill.
  • To serve, just slice and place on top of chops or steaks or chicken.
