Learn how to make the perfect carrot cake with Mark Moriarty

Top chef Mark Moriarty is returning to our screens with a brand new collection of recipes in Off Duty Chef.

This notions-free series focuses on the basic techniques and tips that you'll need to master delicious dishes at home.

Despite being a multi-award-winning chef with every ingredient at his fingertips, Moriarty loves to cook simple and wholesome dishes when he’s off the clock and not in his chef whites.

With plenty of experience in Michelin-starred kitchens, Mark will also be sharing his professional kitchen experience in his How to Perfect series, where he'll be covering everything from knife skills and butchery to how to master simple but effective egg and fish dishes.

Speaking on the show, Mark said: "This series is all about combining simple, everyday ingredients with tips and techniques from the professional kitchen to create delicious meals at home. I’m also bringing things back to basics with my ‘How to Perfect’ segment that touches on everything from how to boil an egg to mastering knife skills."

Since his first TV series in 2019, the Dublin-based chef has been praised for his simple and professional yet down-to-earth approach to cookery. Off Duty Chef will showcase this as it will focus on teaching basic recipes with Michelin-star skill.

Each episode focuses on three key recipes: a speedy main/lunch designed with busy days in mind, a more involved main dish, and a restaurant standard dessert.

Mark kicks off the series with a classic Carbonara with a cheffy trick for serving up, then it’s onto one of his favourites, a deliciously simple yet elegant carrot cake.

In his How to Perfect segment, he’ll be demonstrating why he only ever uses two knives at home and will be bringing it back to basics with some very useful knife skills.

To put these skills to good use, Mark will be whipping up Individual shepherd's pies, peas with mint, lemon and feta.
